ingredients

base layer

2 cups pitted dates, soaked in boiling water for 10 minutes

3/4 cup almonds

1/4 cup cacao powder 

1 tsp ground cinnamon 

3/4 cup hemp seeds

 

top layer

1/2 cup coconut oil

1/2 cup cacao powder

2 tbsp maple syrup 

1/2 tsp vanilla bean extract 

2 tbsp hemp seeds

 

method

base layer

line a 9"x5" loaf pan with parchment paper and set aside. 

in a high-speed food processor, add in almonds pulse until just broken up. drain water from soaked dates and add to processor, pulse a couple of times to break down.

add in cacao and cinnamon, blend until well incorporated. 

add hemp seeds and pulse until seeds are blended through the mixture. 

press mixture into lined loaf pan and set aside.

 

top layer

in a double boiler over low-medium heat, melt down coconut oil.

once completely melted and smooth, whisk through cacao, maple syrup and vanilla. 

remove from heat and pour over base layer. 

refrigerate for 1-2 hours or until topping is completely set. 

remove from refrigerator and sprinkle over extra hemp seeds. 

cut into slices and enjoy! 

 

prep time: 15 minutes

cook time: 5 minutes 

chill time: 2 hours

serves: 10-12 slices
