hemp waffles

ingredients:

1 1/2 cups almond milk or any dairy free milk of choice

1 tsp apple cider vinegar

1/4 cup coconut oil, melted 

1/4 cup maple syrup

1 3/4 cups gluten free flour 

1/2 cup rolled oats, gluten free

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon 

3 tbsp hemp seeds

2 tbsp melted coconut oil, for greasing

toppings

1 banana, sliced 

fresh strawberries, sliced 

2 tbsp hemp seeds

maple syrup, to drizzle 

method

in a small mixing bowl, combine milk and apple cider vinegar, whisk well and set aside. 

in a separate large mixing bowl, combine flour, oats, baking powder, cinnamon and hemp seeds, mix well. 

to the milk, whisk through melted coconut oil and maple syrup. 

pour milk mixture into dry ingredients, whisk until well combined and smooth. 

preheat waffle maker to manufacture’s instructions. 

once waffle maker is heated, using a silicone pastry brush, liberally grease both the top and base of the waffle maker with the melted coconut oil.  

pick up a small ladle full of the batter, approx. 1/2 a cup, and pour onto the centre of the waffle maker (or refer to your waffle makers cooking instructions).

cook waffle for 3-6 minutes or until completely cooked through, golden and crispy. 

gently remove waffle using a plastic spatula and set aside. repeat with remaining batter.

transfer to serving plates and top with banana and strawberry slices. sprinkle over extra hemp seeds and drizzle with maple syrup. 

serve and enjoy! 

prep time: 10 minutes

cook time: 15 minutes

serves: 5-6 waffles
