3/4 cup of gluten free oats*
1/4 cup of peanut butter
1/2 tsp baking powder
1/2 tsp bicarb soda
1 tsp cinnamon
1/4 cup coconut sugar
1/2 cup hemp seeds
1 tsp vanilla extract
2 tbs coconut oil
1/3 cup of walnuts
1/2 cup of almond milk x 1 tbs chia seeds. (best if these are combined before mixing with other ingredients to ensure that the chia seeds absorb the milk. this acts as a vegan substitute for eggs)
preheat oven to 180 degrees.
combine wet ingredients in a bowl including the peanut butter and whisk together to form a paste.
add the dry ingredients and combine with a wooden spoon.
lay baking paper on the base of your baking tin.
for a thicker bar, use a loaf tray or spread the mixture over a slice tray for a thinner bar.
evenly spread the mixture and bake in the oven at 180 degrees until golden brown.
cooking time will depend on the baking tray - approximately 25 mins.

* oats are gluten free, however most oats are grown in fields next to wheat which means cross pollination can cause the oats to contain traces of gluten. therefore, gluten free oats are oats that have not been grown next to gluten based crops. keep this in mind!
